Expectant dad who can only make omelettes. What should I learn to cook first?

We're expecting, and I've realised my kitchen skills stop at omelettes, Maggi and coffee. My partner runs her own business and has been doing most of the cooking around her work, which won't hold once the baby comes. Family will help for a while, but not forever. So I'm learning now. What would you put at the top of the list? Things that are useful in the first months, not showpiece dishes 🤷

Rice and dal in a pressure cooker, without anyone standing over you. Then one vegetable stir-fry you can vary, and curd rice. With those three you can feed a household for a week. The one I wish I'd learnt earlier is a simple rasam or soup, because in the first weeks your partner may want something warm at odd hours. Are you comfortable with a pressure cooker yet?

The most useful thing my partner learnt was making my tea exactly right at 3 am without asking. Cooking came second.

Learn breakfast before anything else. Lunch and dinner tend to get covered by family, neighbours or a tiffin service. Breakfast at 7 am after a bad night is where it falls apart in most houses. Poha, upma, eggs a few ways, and a porridge. Make each of them four or five times before the baby arrives so you don't need a recipe.

Breakfast is a good call, hadn't thought of that. Poha I can attempt this weekend. Partner has already asked for appam, which I suspect is a step too far.
