Meal prep for school nights: what do you batch without food becoming boring?

The hardest part of weekdays is deciding dinner at 7 pm when everyone is hungry. What do you prep on Sunday that actually survives Indian family meals through the week — batters, gravies, chopped vegetables, cooked dals, something else?
