My 9 year old wants pakhala every day, even now that it's raining

He spent the summer at my mother's and came back a pakhala devotee. Every evening after school he asks for it, with fried potato and badi, exactly like his Aai makes. In summer I soak the rice overnight and it's perfect by lunch. With this humidity it turns sour much faster, and by morning it smells stronger than I'd like. Do you make the same-day version in the rains, or stop till it's hot again? He's going to argue either way, so I'd like to be on firm ground.

We called our version basi bhaat at home, with curd. My nani made it the same morning in the rains, a few hours in water and never overnight. Can't say if that's the correct way but nobody got sick and nobody complained.

The fridge takes away the sourness he's asking for, I think. We do pazhankanji at home, overnight in a clay pot, but only in the cooler months. In July my amma soaks it in the morning for lunch and the children don't notice.
